Back in the early 90’s Gerald Schantz, a Savannah native, a Vietnam era Navy veteran, a professional stained glass artisan and local theatre thespian happened upon an opportunity to cater a private party for the cast and crew of “This Old House” which John Berendt, author of Midnight in the Garden of Good and Evil was throwing. Before the event was over, Gerald found himself talking to the show’s producer who commissioned him to handle the company’s wrap party in Monterey Square. That event was so successful, the entrepreneur purchased the first of several custom grills on wheels that formed the beginnings of his rolling catering service, GERALD’S CHUCKWAGON.
After several fulfilling years of catering Gerald decided it was time to sell his stained glass business thus, he did…and then opened GERALD’S DINER in downtown Savannah.
Though he had an undying love for downtown Savannah, he was unable to resist the island’s lure that had tugged on him throughout his lifetime. So again, forging ideas, blazing trails, and jumping through hoops to get site approval, he moved to Tybee –as a food truck operation– coined, GERALD’S PIG & SHRIMP.
With rave reviews and awards won, business flourished. Gerald added seating, constructed the Pole Barn and supporting commissary, hired staff, got a beer & wine license and eventually realized the business was outgrowing the food truck. Thus, plans to construct a commercial kitchen began to form.
Early spring 2018, Gerald’s Pig & Shrimp was featured on Travel Channels’ Food Paradise, Crusin’ The Coast. This brought more guests…more evolution…more growth.
The establishment closed in October that year for construction. Due to multiple construction delays Gerald’s planned re-opening for spring 2019 was delayed until Jan 1, 2020. [2019 — the year that wasn’t!]
We’re back now! … in our new kitchen … frying shrimp and smokin’ meats.
